Fermentation:

21 days in stainless steel fermentors.

Distillation:

Twice distilled in 1,200 liter copper pot stills.

Aging:

Aged in new White American Oak with medium char.

Blending:

Blending is performed by taste in quantities of 15-20 barrels at a time.

Bottling:

Bottled and wax-sealed by hand.  Never filtered.

Mash Bill/Composition:

100% First Strike Baking Molasses from Pennsylvania.
